Dulse Mashed Potatoes

A classic Maritime-style side that boosts flavor and nutrition.

Ingredients (Serves ~2-4):

1 medium potato (boiled and mashed)
25g butter
0.5–1 tsp lemon juice
Salt and pepper to taste
750 ml (about 3 cups) milk
25g Dark Harbour dulse (chopped and soaked in water for 5-10 minutes, then drained)

Instructions:

Simmer the milk, soaked/chopped dulse, and mashed potatoes together for about 20 minutes.
Beat well or blend until smooth.
Season with butter, lemon juice, salt, and pepper.
Serve hot as a comforting, seaweed-infused mash.
